More than a year since chef Sandra Batiste announced plans to bring some Louisiana style to the Gramercy, newly filed paperwork reveals the Bayou Scratch Kitchen is back on track for the westside.
While still operating the BonaBatiste Taste Couture catering service out of Las Vegas and greater Los Angeles, the Cajun- and Caribbean-inspired restaurant replaces the shuttered Portion Control meal-prep company, located between The Cuppa coffee shop and DW Bistro. The 20-acre mixed-used complex is also home to Kitchen Table Squared and Pinches Tacos.
Filling 2,466 square feet and taking advantage of kitchen equipment left behind by the previous tenant, the current remodel include new interior walls, plumbing and electrical work.
Once projected to be ready by January of this year, chef Batiste predicted future dishes would include po’boy sandwiches, coconut chicken, Cajun lobster, crab, and gumbos, plus weekend Mardi Gras-themed brunches highlighted by soufflé omelets, shrimp and grits, beignets, chicken and waffles, and smoked alligator, “flown in weekly from the swamps of Louisiana.”
An estimated new opening date has not been updated.
